Congrats on the waitlistings... while I know it could be better, you have not been turned down either. At many programs, if you are waitlisted R1, you'll be re-considered along with R2 applicants.
Be sure to pay close attention to all communication from the schools re: the waitlist procedures. For some you need to opt-in to stay on it. Some welcome and invite additional info; others ask you not to send anything else.
For many who welcome updates and info, we would definitely recommend sending them an update within a few weeks to a month of being wait-listed. Of course let them know of any recent accomplishments or changes in your life or profile. If you have any feel for any aspects of your app or story you told that could cause them to hesitate, consider addressing those head-on. Re-establish just how much you WANT to go to that school.... with clear and compelling (and genuine) reasons, that can make an impact. Seek another letter of rec if you think you could get another strong one. The course work, if you feel it will help you in b-school etc you could go for it and let them know, but I'm not sure that your coursework or even GMAT are the main thing causing hesitation... it's tough to assess without reviewing your app in full of course. The way you explain yourself in your app and especially the essays since that is the main place you show who you are, can make a fairly strong impact... in terms of showing who you are, what you'll bring, why you want the degree, what you'll do with it, why this school is right... etc.
