Option 1 is the better job title but Option 2 seems like the role will prepare you better for the type of work you will be doing in consulting, which I would lean towards. Focus on the role you think you will align best for your LT goals and provide the best ownership and interpersonal development. Sounds like you are well on your way with these two options. If you will start the job by the time they will review your application then you can probably include this on your resume you just will not have much to speak of since you will not have accomplished anything
