Which is used to modify a non-restrictive clause, meaning, without the modification, it would not change the meanining of the sentence

That is used to modify a restrictive clause, meaning, its necessary in order to make the sentence complete

An example is "Paul's ID center, which is called SUNNY, has been successful so far." Here that is unnecessary: the which does not tell us which of Paul's many ID centers we're considering; it simply provides an extra piece of information about the plan we're already discussing. "Paul's ID Center" tells us all we really need to know to identify it.

Madonna, who is a singer, is Tony's favourite.

So, you should identify if you need the relative clause information or not!!

i guess ur explanation is good but the example should be

The man who(not that) is wearing a black suit is my father

that is used for "things" or collective nouns that are anonymous..
