I don't actually think reducing the number of essays necessarily reduces the amount of work for admissions consultant. From personal experience, writing that single open HBS essay was much harder than writing one 2-3 essays that tackle why MBA, leadership, or other usual topics. I imagine it is the same for admissions consultants in terms of time spent brainstorming with a client.

At the end of the day, it's a free market. If people are willing to pay these prices for admissions consultants, they will keep charging them. With the applicants increasing and size of classes remaining constant, people are willing to pay these prices to get an edge. It is up to the applicant whether they think it is money well spent or not. There are other options out there like essaysnark who only offer essay-reading services rather than the whole admissions package that are a bit cheaper.

Personally, I decided against a consultant and it worked out fine. At the end of the day, it is your own prerogative whether you pay their prices or not. But in essence I wouldn't say a reduction in the number of essays necessarily reduces the amount of work for the applicant or the consultant.
