I think schools aren't normally very worried about the number of attempts, but to answer your question:
I don't think they can see the number of attempts. I've seen school reports (for the test center test), and they do include a lot of information. However, a school can tell that a test taker took the GMAT multiple times only because the columns for additional attempts aren't empty. These columns aren't populated for canceled scores, and I don't remember seeing a field called "number of attempts" or something like that.
I don't think GMAC has changed this for the online test, and so I don't think your target schools will be able to see the number of times you've taken the GMAT.
