Hi trivium,
First off, a 740/Q47 is an outstanding score (it's well above the 90th percentile overall) and it would make any Business School happy. As such, there's no reason to retest. Some high-level Finance Programs and Specialty MBA Programs might *prefer* a higher Quant Scaled Score, but they don't *require* it. If you were rejected, then it was NOT because of your GMAT score.
Based on what you've described, I assume that you applied to some Top Business Schools. The competition at these Programs is intense; most Schools will reject 80%-90% of applicants and the tough part is that they're almost all GREAT applicants. So the issue might just be a "numbers game" - you were clearly interesting enough for the Schools to want to interview you, but maybe the other applicants came across a little bit better. In that regard, there might not be much that you can do. Business School representatives tend to be fairly open with information, if you ask. So, if you want to know WHY you were rejected, they'll probably tell you. If you do contact the Schools, then make sure to be professional and respectful about all of this - you're asking them for information, after all.
The other possibility is that you "screwed up" your interviews in some consistent way. Based on what you described, this could very well be a factor in your first set of application results.
