Thanks for reaching out. I'm sorry to hear you came down with Covid. Hopefully you make a speedy recovery!
You should submit both scores and write a version of what you have described to us in the section for your "optional essay." That feels more than appropriate. As far as how they are "allowed" to count scores, that's up to them, but since you don't have time to retake the test again you really have no other options. I am confident they will consider this explanation to very legitimate and won't hold it against you.
