Can someone explain why option A and B is wrong?

The non-underlined word when indicates a conditional relationship. The verb is is an absolute action. For this reason, the form of the verb to be is not acceptable. Hope that helps!

E) A crippling disorder for many young women, anorexia nervosa develops


HI..

If you look at the Underlined portion in Original sentence....

"A crippling disorder for many young women, anorexia nervosa is" -
Appositive modifier "A crippling disorder for many young women" correctly modifies "anorexia nervosa"
BUT "IS" requires some description of disease, a description that is missing as the non underlined portion starts with WHEN..


E correctly changes IS to DEVELOPS, thus correcting the usage of WHEN in non-underlined portion.

If you focus on non underlined portion you will understand that it explains when that disease occurs. IS is used to describe something. So, the issue is the verb.

A crippling disorder for many young women, anorexia nervosa is when issues of control and distorted body image result in a dangerously low weight within the context of age, developmental trajectory, and physical health.
A) A crippling disorder for many young women, anorexia nervosa is
B) A crippling disorder that affects many young women, anorexia nervosa is
