I agree about the singular/ Plural but my confusion is about

E ) -their shanks are still considered a delicacy

As per rules we don't use A/AN/ TO BE after considered ???

Isn't E wrong then ?

X considered to be Y can be right in some cases, but X considered Y (shanks considered a delicacy) is the proper idiom.

Although Mona monkeys have been protected by ordinances that ban the hunting of species native to the island for almost 50 years, its shank is still considered a delicacy by those living in Grenada.

-its shank is still considered a delicacy
-their shank is still considered as being a delicacy
-its shanks are still considered delicacies
-its shank is still considered to be a delicacy
-their shanks are still considered a delicacy

All readers: some kudos please

1. Split between its & their: their is a correct pronoun as the mona monkeys is plural.

2. is and are in option B & E: are with plural.

E is the correct option
