I too came up with D but want to understand/confirm that the 'they' refers to right-brained individuals and not the left-brained individuals in this case.

Is this because 'left-brained individuals' is separated by commas?

Sure, that's part of it. The bit about left-brained individuals is a modifier set off with commas, not part of the main sentence. However, it's also important to note that if we read "they" as referring to left-brained individuals, then the sentence makes no sense. How can left-brained individuals fall short of their counterparts on the basis of something that right-brained individuals do not do? The two ideas don't make sense together. More generally, if we see "Because X, . . . " then the clause that follows must be what happens because of X. For that reason, "they" must refer to whatever that initial statement of cause is talking about.

Because right-brained individuals do not employ convergent thinking processes,
like left-brained individuals,
they may not notice and remember the same level of detail
as their counterparts

Eliminate, A, and B: - Wrong usage of "like" to show similiarty,
here intended meaning is comparison between two, "right-brained individuals do" and "left-brained individuals do"
A) like left-brained individuals,
B) unlike a left-brained individual,(singular - subject)

C) as left-brained individuals - Wrong: Parallelsim Error, which is corrected in Option D, and does not have "verb"
E) as a left-brained individual can - Wrong: "Individual" Singular

Option D
Because right-brained individuals do not employ convergent thinking processes,
as left-brained individuals do,
they may not notice and remember the same level of detail
as their counterparts
Correct: Maintains Parallelism, Plural Subject, correct usage of "as", involves verb "do"
