I picked C but couldn't eliminate D. Anyone with a solid reasoning ?

Shadyshades Option C already includes option D. Option D just talks about one way of increasing the quantity of fresh water, whereas option C tells you that the water supply will not increase sufficiently.

Can someone help with the reasoning to eliminate A?

My reasoning is - the conclusion talks about restrictions in usage >> humans will HAVE TO adapt in order to reduce consumption in the long run.

Have understood the reasoning for C, but cannot eliminate A

A) other sources is irrelevant to the stimulus
B) has not diminished does not mean water supply has not decreased or it might remain stable.
I agree with the C most. Negated version destroys the argument.
D and E's negated versions do not hurt the argument.
"None" negated is "some"

Commentator: Although the present freshwater supply is adequate for today’s patterns of water use, the human population will increase substantially over the next few decades, drastically increasing the need for freshwater. Hence,
restrictions on water use will be necessary to meet the freshwater needs of humankind in the not-too-distant future.

Which one of the following is an assumption required by the argument?

(A) Humans will adapt to restrictions on the use of water without resorting to wasteful use of other natural resources. - WRONG. "Other natural resources" modifies the claim that humans will adapt. But the conclusion(blue text) is such that it's kind of making a conditional statement which may or may not be true.
(B) The total supply of freshwater has not diminished in recent years.
(C) The freshwater supply will not increase sufficiently to meet the increased needs of humankind. - CORRECT. If it increases sufficiently then conclusion fails to stand.
(D) No attempt to synthesize water will have an appreciable effect on the quantity of freshwater available.
(E) No water conservation measure previously attempted yielded an increase in the supply of freshwater available for human use.

Answer C.

Premise:
Although the present freshwater supply is adequate for today’s patterns of water use, the human population will increase substantially over the next few decades, drastically increasing the need for freshwater.

Conclusion: Restrictions on water use will be necessary to meet the freshwater needs of humankind in the not-too-distant future.

The premise tells us that human population and hence need for fresh water will increase drastically.
It ASSUMES that availability of freshwater will not increase drastically (sufficient for the new need) and then it concludes that restrictions will be necessary. Hence (C) makes sense.

(C) The freshwater supply will not increase sufficiently to meet the increased needs of humankind.

(A) Humans will adapt to restrictions on the use of water without resorting to wasteful use of other natural resources.

Irrelevant what humans will do with other resources.

(B) The total supply of freshwater has not diminished in recent years.

We are not assuming anything about what has happened lately. Our argument talks about what will happen in the future.

(D) No attempt to synthesize water will have an appreciable effect on the quantity of freshwater available.

This is not an assumption. An appreciable effect does not mean 'sufficient' or in the same proportion. The conclusion is that restriction will be necessary. So the assumption is that even if water supply increases too, it will not increase sufficiently. The assumption is not that the water supply will not increase. The assumption is that the water supply will not increase proportionally to be enough. That is why this statement is not an assumption.

(E) No water conservation measure previously attempted yielded an increase in the supply of freshwater available for human use.

Past is irrelevant.
