Solicit advice regarding any other college that offers a one-year MBA program, which suits my requirements as mentioned above.

With over 20 years of experience under your belt, the Full Time MBA programs will not be advisable since they are more targeted towards early to mid career candidates typically with 3-8 years of work experience. There are some programs that are specifically targeted towards professionals in the late stage of their career and see candidates with significant work experience in the classroom. Some of these are as follows:
-LBS Sloan Masters
-MIT Sloan Fellows
-Stanford MSx
-USC Marshall IBEAR
-ISB PGPMAX

The International Executive MBAs would probably be a good fit in terms of a program but they usually are targeted for working professionals with classes every weekend / weekdays and hence are not Full Time formats.

You shortlist is pretty restricted and seems to indicate that you have just stuck to the ranking approach for finalizing your options. You are missing out on some really great options such as Haas, Kellogg, Ross which can be really good for enabling your transition from S&T to PM.
Would urge you to hedge your strategy as HWS admits will depend on a wide variety of factors and hence there is always a degree of ambiguity regarding the final outcome to these schools. Additionally, outside Stanford, HBS and Wharton tend to focus a lot more consulting and finance in terms of their recruitment, whereas the west coast schools target the Tech and Entrepreneurship for their target careers.

You GMAT is good and academics are decent. Plus the Citi Fintech experience will be a positive from an application standpoint. The only aspect of your application which can put you on a backfoot is the software developer role since there isnt a dearth of those in the Indian application pool. Thus, it will be advisable to have a strong focus on your applications and really work towards differentiating it from other applicants through various means such as ECs, stories, research, school fit etc.
Your school selection is broadly on spot although I would swap NYU Stern with a UCLA Anderson / USC Marshall and maybe LBS with Cornell unless you are too keen on a career in the UK.
