...I know you can retake the GMAT but a lot of folks break 690/700 and say good enough, but average scores at the top schools are now closer to 720 than 700...soon 720 may be the magic number.

It depends on what your goals are. For example, if your GPA is above the middle 80% at all schools, then 680-700 should be sufficient (depending on the other parts of the application of course). If you are trying to compensate for something in your profile (GPA for example), then it is more important to have a GMAT score at or above the averages. An average is just that...an average; there are people above and people below.
