There's a practical aspect to what you're asking about that will probably answer your question. What happens when YOU try to schedule an Official GMAT at a Test Center? If you have a date and time in mind, then you should try to schedule an appointment and see what happens.
As far as what additional procedures will be enforced because of the Covid-19 virus, I would have to assume that you will be required to wear a face mask at the Test Center (and even if you're not required to wear one, you should still wear one). Beyond that - and a certain amount of 'social distancing' at the Center and in the Computer Lab - I suspect that the rest of the typical GMAT testing rules will remain the same as before.
