If you get 720, I think you will have a fair chance at any of the schools that you mentioned provided your essays are of good quality. Your work-gap of 8 months might haunt you. But, you cannot do much about it. So, if I were you, I would just focus on GMAT and essays.
Regarding your post mba goals, you might want to see how you can tie in your earlier roles (Market Analyst, Data Analyst, etc) with your future one (Marketing Analytics or whatever). I think it is not a long stretch. You should aim high for your long term goal. Speak to few alumni at Stern and other top schools. Don't think of BU, BC, or Babson now.

1.5 years Market Analyst at a large international banking company
I then accepted a job in a totally different field in a totally different place. I decided to move from Boston to Austin on whim. Had a few friends who where making the trip, and I joined in. Worked as a Data Analyst for a small internet startup for about 5 months, and was then let go (rescission based reasons) I was out of work for about 8 months
Moved back to boston and accepted my current job
2.5 years, IT Security Analyst at a big name apparel and home "off-price" department store company.
Taking the GMAT in Oct, not sure if I'll be trying for R2 at a few schools (Stern in my number 1) or if I'll be going the route of part-time (NYU W/E #1). but I'm thinking applying for 2013 is a better bet. If thats the case my work experience will be 3.5 are the current job.
So, lets say I pull a 720(which is where my practice exams are putting me), what are my chances at a place like Stern, or am I destined to a regional like BU, BC or Babson...
What would I need to be considered at NYU??
Also, PT vs FT... I would love to get away from IT, and back to Finance or even marketing analytics... do you think I'll need a full time program for the career change?
