About a year ago I took the GMAT without studying, so that I could gain admission into a master degree progam, and I have now decided that once I have completed the program, that I would like to apply to PhD Business programs. I have decided to retake the GMAT with the goal of scoring 700+ and was wondering what would be the recommended way for me to go about this. Quant is by far the weaker of my two sections, so I was wondering what book would be best for this area to study from? I know the
Manhattan Prep books are well regarded, but if there is anything else that would be better for my situation, I would really appreciate it.

41 in the verbal section without studying is awesome!
Perhaps you can easily get 42 or more this time, after preparing yourself. I think you most probably only need to read a few books on SC.
However, your quant score is rather low. I think you can make considerable progress in this part, raising your score to 48, 49 or so.
I think getting a 750+ score is quite a reasonable goal for you, provided that you improve the quant's score.
It seems to me that you have not had a solid background in math, as engineering students have.
But if you are the person who can score 41 on Verbal part without studying, I think you definitely can increase your quant score to 48, 49 or 50.
Good books? Any math book at high school level which covers topics that gmat tests. I also recommend
Manhattan books ...
