Hi DavidSt,

Giving a CAT each day is not at all a good idea. You are sure to burn out because of that.
I will agree here with Rich that at max, you can take one CAT and make sure it is GMAT Prep.
After taking the test, analyze the test thoroughly and figure out which section or problem type is troubling you.

Keep the rest of the time for your practice (make sure it is timed) and going through the Verbal also. You want to make sure that you hit your CAT scores in Verbal in the actual GMAT too.

All the best!

I would not over study before you take the exam. Manhattan quant sections are particularly tough. I think the highest I got on a Manhattan quant section was a 45 or 46 and ended up getting a 50 on the actual exam.

Takeaway: don't cram or over study. Maybe do some practice problems from the official guide to keep yourself sharp but don't do anything for two days before the exam.
