First, congrats for acceptance in one of best programs in Europe.
Second, what your employer did is really very strange behavior. However, it happened and you can turn it to positive experience. I hope the following tips could help you.
Professional education•You need to think in workshops/special certificates that could relate to your targeted job/market.
•You can take special courses online such Coursera that add value with affordable price and can complement you MBA program. You have a lot about data analytics.
• Start to have a look about your MBA courses. You can read some textbook but do not take it real study. Otherwise, you will feel boring by the time of starting MBA. Also, you can think about weakness in your profile such as finance and accounting.
•You can be a member of large institutions or professional societies.
Career planning•As you are in Spain, you can later visit the school and begin to build connections with career office. You may know you career coach.
•Visit the recruiters portal in your (or dream) university to know about them clearly. Search about them in LinkedIn and add them. Later, you can create some sort of discussion through emails or Skype.
•Pay close attention to your resume in light of the companies you target. You may want show experience that may attract them to you. Clearly, in advanced phases, a good career coach will help you.
•Final note: As you have 10-experience, shifting to another filed may be hard. So you need to have plan B. You may progress to another career that has some relation to your background. Here comes the career coach role. You may be advised early about the viability of your target career.

Thank you for your encouraging response. I feel more positively having read your post.
As suggested I plan to do the following:
Aim: to enter into management consulting field.
Steps:
Improve my GMAT score to cross 720
Complete Data Analytics courses including R, SQL, Python, Tableau etc
Also I'm actually an Indian, so visiting Madrid is a little difficult.
I understand that after 10 years experience, change could be difficult, I'll make a Plan B too.
