Hello Kalirocks,
I'm not an expert, but I believe that it is because "Hailed as a key discovery in the science of evolution" is the modifier of the "fossils" (discovery is part of it) and afterwards if you just cut the fluff between fossils and provide (all in between are modifiers of fossils) then you have fossils provide which is the correct structure.

This question is based on Modifiers and Construction.
The sentence begins with a modifier - Hailed as a key discovery in the science of evolution – so the noun placed after it is considered the subject of the modifier.
In Options B and C, the noun placed after the modifier is “a large scaly creature”. However, it is not a large, scaly creature that is hailed as a key discovery in the science of evolution. Since this placement changes the meaning, Options B and C can be eliminated.
In Option D, the singular verb ‘provides’ causes a subject-verb disagreement because the subject ‘fossils’ is plural. So, Option D can be eliminated.
The meaning conveyed by Option E is that the fossils resemble a fish and a land-animal. The meaning conveyed is illogical since it is more likely that it is the creature that resembles a fish and a land-animal. So, Option E can be eliminated.
Option A maintains subject-verb agreement - the fossils of a large scaly creature resembling both a fish and a land-animal provide evidence of.
The modifier “resembling both a fish and a land-animal” modifies the subject “a large, scaly creature”.
Therefore, A is the most appropriate option.

(B) a large scaly creature resembling both a fish and a land-animal provides fossils that are evidence -> Modifier error. "a large scaly creature" is not "Hailed as a key discovery...". Incorrect.
(C) a large scaly creature, whose fossils resemble both a fish and a land-animal, provides evidence of -> Modifier error. Same as B. Incorrect.
(D) the fossils of a large scaly creature, which resembles both a fish and a land-animal, provides evidence of -> Subject verb agreement error. "the fossils" needs plural verb, but we have "provides" singular verb. Incorrect.
