Hopefully I can shed some light on the hiring situation in European MBAs having completed one myself.
I can speak on behalf of consulting because I applied for consulting (MBB and Boutiques) and used to work in consulting prior to the MBA.
Prior to COVID
MBB applications would first be open to students from INSEAD and LBS. Once those students are interviewed and received offers then other European School application rounds would be open. Which means there is usually a lot less quote for other European MBA schools.
That being said, I wish to be devils advocate here and say that your chances of getting into MBB is no guaranteed and is indeed a uphill battle even prior to COVID.
INSEAD has close to 1,000 graduates per year all of whom are applying for consulting. They do a great job preparing you for interviews and case studies but at the end of the day because it is a one year MBA, your previous experience would strongly influence whether or not you get your foot through the door in the first place.
With regards to your question on job prospects, I found a number of my classmates hedging their bets and applying across a number of jobs throughout the year.
