I'm working through the final 1/3 of the OG 12 quantitative problem solving section and it seems ridiculously easy, even though the GMATClub Guide says it's hard. I last (mock)tested with a 640 (39Q) so I don't usually breeze through GMAT quant problems.
Are these an accurate representation of hard problems that appear on the GMAT?

For someone with a clear conceptual understanding, the OG questions are pretty easy. That said, there are some selective questions that are worth doing.
No, these are not representative of hard problems on GMAT. Every hard problem in GMAT will make you think a little, irrespective of how strong your Math is. They present basic concepts in a tricky format. You can't just close your eyes and mark the answer the way you can do in OG. But again, if your concepts are clear, you should be able to do most of the GMAT Quant questions well (and they will be fun to do!).
