Hi Dylan,
Thanks for sharing your score report. It's too bad that you have only 2.5 weeks. Otherwise I kinda feel you could aim even higher, given your great first mock score and your math background.
The good news is, you have done quite well in Verbal and DI, while Quant is usually the most "workable" section.

Final week strategy: Should I:- Take a second official practice test Tuesday and focus on maintaining confidence?
- Drill specific weak areas intensively?
As to this last week, I'd suggest that you do both. It seems like you still have some gaps in some Quant topical areas. I'd suggest that, based on the analysis of your errors, drill intensively one math topic at a time. You can use GMAT Club question bank to filter questions by topic, and set up a drill of 15~30 questions for each topic, from Easy to Hard difficulty. You seemed to be still missing some of the earlier questions in Quant, which tends to have bigger impact on your score.
For how to practice questions on GMAT Club, you can refer to the following great post:
How to Practice Questions the Right Way on GMAT ClubOne thing to remind is that for people with strong math backgrounds, sometimes they tend to solve GMAT Quant questions in a "too rigorous" or academic way. Remember that in GMAT, every question is supposed to be solved in about two minutes' time. So when you review your errors in your practice drills, not only look for where you got the answers wrong, but also for questions you spent more than 2 minutes. Then look up the various solution approaches to questions you take too long, and learn the most efficient way to problem-solving. Also, a lot of times, the questions can be solved either by estimation, by working backwards, or by testing cases.
Hope this helps a bit and all the best.
