I submitted my GMAT score that I took a couple months ago. The score was in the low 500s and was sent to the schools I was interested in. I am now thinking about taking the GRE in hopes of a better score. Would schools not like having both scores or would a good GRE help offset a low GMAT score?

You should keep a couple of things in mind before going for GRE.
1. Are you aware of the format of GRE and how it is different from GMAT format?
2. Do you really think you can get the desired GRE score within the time frame you are left with? Do you have sufficient time to prepare for GRE and give it a shot?
3. Are you considering other side of the coin as well? I mean what if you are not aware of anything on GRE and end up getting a low score. Won't that waste your time, which you could have used to improve your GMAT(as you are already aware of its format atleast).
Other than these, you should ask the specific schools whether they will accept the GRE score provided you have submitted your GMAT score to them. If they say they will accept the best of the two, then you can go ahead and try your luck.
