You are wrong here when you say " Giant kangaroos became extinct during a period that was less arid than previous periods they endured.
This means KG's thrived through the periods in which Food was less".

Since Kangaroos became extinct in a lesser arid period, they survived previous more arid periods, and since more aridity implies more food (as you also stated), this means KG's previously trived through the periods in which Food was more". This is why I agree that option A goes against Marco's assertion that food scarcity was not the reason behind their extinction.

I would rather argue that option D justifies Marco's assertion that KG fed mostly on saltbrush, and hence proof of inclusion of plants other than saltbrush in their diet does provide evidence of/justify this assertion.

Marco: Giant kangaroos—one of several extinct species of large mammals (megafauna)—went extinct in Australia around 46,000 years ago. The deposits and wear patterns on the teeth of these animals from around the time of their extinction indicate that they fed mostly on saltbrush shrubs. Saltbrush thrives in arid climates, so it is not likely that the kangaroos’ food supply was adversely affected by the increasing aridity of the climate at the time. Thus, something else would have to account for their extinction, and the best candidate for that cause is predation by humans.

GK fed on SS and SS thrive in arid climate.
More arid --> more food --> thriving KG
Less Arid --> Less Food --> Not so thriving KG [Can we say this?] from the information given?

Option A: Giant kangaroos became extinct during a period that was less arid than previous periods they endured.
This means KG's thrived through the periods in which Food was less. so in the given period of extinction, their food supply was better than the past few less arid periods,
Thus supports the Argument that Food (SS) is not the cause and something else happened.
