In light of goals, and reglaess of EMBA being most effective to you, I will give my 2 cents for Online MBA.
1- Kelley would be most effective as it maintain least in terms of meeting people and recruitment.
2- Then comes Ross and UNC but both can add to your professional arsenal in term of the modern curriculum and electives. I agree with you that UNC is not clear about how it will help you making interaction with people and recruitment but it mentioned in different places in its website. Kelley is more general MBA. If you interested to lean about business analytics, so I can offer you cheaper alternative from Texas McCombs or Wharton (both needs NO prior knowledge about data analytics and will take you step by step).
3- In your original post, you mentioned about different goals but I think you are realistic about how achieve them in your age. I'm familiar with assets management and finance but I can speak for MBB. I think as BB said, it will be very hard.As I know personally getting there after 35 is very hard but you can certainly search in BCG for specificity track. Also, Boutique consulting will be more than welcoming you.

Update: I decided to wait to see if any other more highly sought schools would launch an OMBA program in the wake of COVID ... or ... if my personal situation might change sufficiently to make an EMBA feasible.

I have delved in those online MBA programs and even contacted the adcom for each school. But I want to know some info. What do you exactly seek from doing MBA in this age? What do you miss and the MBA will help you with?
Mainly to refresh my professional profile, network with new people, and have exposure to a variety of bright people from many disciplines.
