First, I would say you do have a decent overall academic statistics along with a good GMAT score; however, applying to top European schools such as HEC, INSEAD, LBS, IE, and IESE, you need to have a stellar GMAT score as it's a prerequisite, especially for candidates from an over-represented pool. Therefore, if possible, take a retake and aim at least for a 725+; this would increase your chances of admission and help boost your overall profile. Moreover, if you wish to stick with your current score, it would require more in-depth information about your profile to back your scores with some substantial examples of leadership, decision-making, and analytical skills in your work tenure.
Coming to your question, I would say you should target the school as mentioned above in the round 1 itself to be in a safer position since, in earlier rounds, colleges tend to diversify their class profile; hence, it would be a great opportunity for someone from an over-represented pool. Now for your work experience, you haven't mentioned much about your responsibilities, critical projects, work environment, or any professional accolades/promotions. Hence it would be great if you could add some points there. Finally, about your ECAs, I would suggest you add more on the experience of being an entrepreneur and also at least add some points to your volunteering work and ECAs mentioning all about your contribution, the challenges faced, leadership roles played, the impact generated, and the relevant skills developed through your ECAs to bank upon them!
All in all, you do have a decent profile. Applying early could definitely help secure a spot in top European B-Schools. For your reference, I would suggest you read

Work Experience-.
(Latest) 8 months - Equity Research in European Oil & Gas sector as offshore support for one of the top 5 banks in the world.
3 years - trading oil and gas derivatives in USA & UK markets
CA Internship- Experience in Audit, taxation, loading with govt departments & finance.
Digital marketing internship at a start-up
Extra Curriculars-
Participated and won many competitions relating to Finance, Marketing, Sports, etc during college.
A short entrepreneurship stint.
Volunteered with a Rotary club to bring sponsorship for a food drive during Covid.
Future plans-
Want to move into consulting in Energy transition space before starting up something on my own.
I have preference for 1 year MBA vs 2 years. And I am inclined more toward Europe.
What colleges should I be targeting & what is achievable considering i want to go for this Sep/Jan attempt.?
What more options would open for me if I defer my plans for the next year considering cost is a constraint.
