With the low GPA, the best strategy to mitigate this is a high GMAT. Over 700 should be your target for the schools on your list. You can also write an optional essay showing awareness of your low GPA and offering any necessary context. Depending on how much time you have before you apply, and where the issues lie with your GPA, you could also take some supplemental courses, or complete a program like MBA Math to show your quant skills in another format. You should also ask your recommenders to highlight qualities like maturity and hard work, so Admissions can see you have grown since university.
Otherwise, your work background sounds strong and a great mix of established company + startup experience. Nice that you have a few extracurricular activities too. If you don't have much leadership through those activities, that could be something you try to improve, by organizing a volunteer project, for example.
But mostly I think you're on the right track with focusing on mitigating your GPA. The higher GPA in the MS program does help with that too!

I'd really appreciate it if you could review my profile.
General: female, 31 years old, based in Lisbon.
Education: Bachelor's in Chemical and Biological Engineering with GPA 2.62 (from Turkey) and Masters in Management from IE Business School with GPA 3.26 (Madrid).
Work Experience: 3 years in a vertically integrated utility in Portugal (various departments including strategic planning department) and 4 years at a unicorn start-up in Portugal (promoted after 3rd year).
GMAT: After 3 tries, my scores are all 640-650-660....I am planning to re-take and hope for 700+.
Extracurricular: Learning to play piano (passed grade 6 level exam of Royal School of Music), reading business books and volunteering at local charities.
Languages: Persian, Turkish, Portuguese, English.
Application goals: MBA at Insead, MiF Full-time at LBS, MBA at HEC
I know my GPA is my weakest point, but I'd really appreciate it if you could tell me how I can make my profile stronger.
