You have a really impressive profile and you should be proud!
In terms of your stats, your GPA is of course excellent, so that is a good start. Your GMAT is also strong, but if you feel like you can score even better because of your mocks, then you have nothing to lose; I would suggest you try 1-2 more times.
Your leadership in your ECs is very important and will help you stand out, so it is good you are a leader in one professional development club; definitely elaborate on that role in your application.
And I am happy to hear you have a return offer at MBB which is very impressive, though ideally you can talk about what other productive activities you are doing this summer, in addition to working on a farm. For example, what transferable skills are you gaining and using?
You should definitely be applying to the top deferred programs, but keep in mind how incredibly competitive they are. Thus, I suggest applying to several to give you the best chance of admission to at least one of them. Hopefully they will see that you have a compelling story and are someone who will add value to the classroom and community.
