Options C, D, & E are incorrect because Plural verb ARE should be used for plural subject PSYCHOLOGICAL CONUNDRUMS. Option B is incorrect because of incorrect placement of BOTH.

Hence Answer is A

Psychological conundrums such as the ability to read another person’s mind, intentions or cognitive processes are of interest to both scientists and philosophers.

(A) are of interest to both
(B) are both interesting to = the placement of "both" is wrong here. "Both" should come before scientists, such as both X and Y.
(C) is interesting for both = S-V agreement error
(D) is interesting to both = S-V agreement error
(E) is of interest to both = S-V agreement error
