just completed my gmat a few days ago and scored 760 (Q49/V44). While I am happy about the overall score, I am wondering whether my Quant score might actually deny me access to some MSc programmes. For, instance, Oxford/Said's MSc in Financial Economics demands a 90th percentile (which corresponds to a 51/51 in Quant(?!)).

Yes you will be able to get admitted at any top EU MS business program.
You didn't precise which specialization you want to pursue on master, but I will assume and work with Finance data as most quant intensive and demanding prerequisites.
For mentioned Said master program, average GMAT score of admitted students is actually 743.

LBS MFA average GMAT score is 708
HEC MIF median GMAT is 710
Imperial MIF want 650 or higher
St Gallen Banking and Finance (MBF) want minimum of 680, Quantitative Economics and Finance (MiQE/F) would like to see minimum of 650.

Bottom line, you are fine your overall GMAT score is top one
