Lets say you answer 600-700 level questions accurately 4/5 of the time, and 700+ level questions correctly around 1/2 the time
What kind of quant score does this give? Is there a simple approximation?

It won't be possible to make a prediction based on this partial information. A real GMAT will include questions of a wide range of difficulty, and students will miss problems that will are of varying difficulty. Your best bet would be to take one of the free Official GMATPrep tests available from mba.com, or the paid ones called GMATFocus(it gives you a range).

The scoring algorithm on the Official GMAT is far more complicated than most people realize, so trying to figure it out is not a good use of your time. You would be better served by assessing your work (and your progress) by taking FULL-LENGTH CATs on a regular basis.
Have you taken any CATs yet? How have you scored (including the Quant and Verbal Scaled Scores)?
