For #2, I prefer E. The LBO firms are hoping: 1) to pay off the debt with the companies' earnings; and 2) to profit richly by the later resale of teh comapanies...".
Debt is payed off WITH money and E has the proper parallel structure.
"Bill bought the puppy with his allowance money"
"Bill bought the puppy by using his allowance money"
In numer 1) A and C seem the best ones to me. I choose C because "IT" doesn't feel right... but i'm not a native speaker so don't mind my feelings on this
If someone could show some light on the "IT" thing it would be appreciated.

(D) with the company’s earnings, profiting

(E) with the companies’ earnings and to profit

Switching the order makes more sense of the "it"...
Ethnicity is a worldwide phenomenon of increasing importance, contrary to the scholarly wisdom of the 1950’s and early 1960’s that predicted the processes of modernization and rationalization {{would gradually undermine it}}.
2. Usage "pay off debt with"
And you do something "to profit"..
A in this question we need a verb UNDERMINE that would refer to modernization and ?-tion... So, A and D left.... D has a problem with split infinitive, so it's out.
