Your best move is to practice with easy, medium, and hard questions because, to score high on the GMAT, you have to be ready to get questions of all difficulties correct.
If you want to skip any questions, the easiest questions would be the ones to skip. The medium ones you should answer since you'll see medium questions on your test no matter how high you're scoring.
That said, ideally, you'd practice one topic at a time, starting with easy questions before moving on to medium and then hard questions in one topic.
