Many GMATers find some aspect of the Exam (whether in the Quant section or in the Verbal section - or both) to be challenging, so you are not alone. It sounds as though you have created an unfair comparison for yourself by focusing only on the 'success stories' that you've read though (it's worth noting that the 700+ Score is approximately the 90th percentile - so clearly most GMATers never score that high on the Official Exam). Thankfully, the GMAT is a consistent, predictable Exam though - so you CAN train to score at a higher level. It's worth noting that most GMAT questions are written so that they can be approached in more than one way, so it's possible that "your ways" of approaching the Exam are a bit more complicated/step-heavy than easier, more-strategic alternatives.
Before I can offer you any additional advice for your studies, it would help if you could provide a bit more information on how you've been studying and your goals:
Studies:
1) Have you used any other study materials besides the ones you mentioned in your initial post? What “brands” of CATs/mocks have you used?
2) On what dates (or approximate dates) did you take EACH of your CATs/mocks and how did you score on EACH (including the Quant and Verbal Scaled Scores for EACH)?
Goals:
3) What is your overall goal score?
4) When are you planning to apply to Business School and what Schools are you planning to apply to?
