Can someone please explain to me the difference between option A and C?

The difference is between singular and plural. In the beginning of the sentence it says estimate which is singular, while in option c it uses statisticS and in option A it is statistic. Hope this helps

How is the difference between ‘statistics’ and ‘statistic’ relevant in this question? Inputs please.

Your approach to solve SC questions requires the below steps:
1. Find errors in the underlined portion
2. Look for other options where these errors have been corrected
3. Check whether other things are constant while the errors are corrected

Notice that in the given question

The 2010 American Medical Association's estimate of the number of primary care physicians in the United States needs revision because the statistic overestimates the number of practicing physicians by including some retired physicians and others who have left the workforce.

A. needs revision because the statistic overestimates the number of practicing physicians
B. need revision due to the overestimate of the number of practicing physicians
C. needs revision because the statistics overestimate the number of practicing physicians
D. needs revision due to the fact that the statistic overestimates the number of practicing physicians
E. need revision because the statistics overestimate the number of practicing physicians

The 2010 American Medical Association's estimate is the subject which is singular. Therefore the verb needs is in its correct form.

Secondly, we also have a dependent clause after because...the statistic is our subject which is singular. Overestimates has been used as a verb here and it is in its correct form.

This means that we haven't found a single error in the underlined piece.

Therefore, A is the answer!

If you read the portion which has not been underlined, you will see that it talks about "The 2010 American Medical Association's estimate". Here the estimate is singular. The statistic is referring to this single estimate.

Here, if we use statistics, it would not be comparable to estimate. We will need estimates.

As a general rule on the GMAT, “due to” is followed by a noun while “because of” is followed by a verb.
Ideally, abiding by this rule, D should be the answer since all other S-V agreement conditions are also being met.
