A. The king of Scotland in the early 14th century was the great Robert the Bruce, and due to his victories he is remembered as a national hero in Scotland because these victories lead to the independence of Scotland from England.
usage of 'because' and 'due to ' does the same work therefore out

B. When Robert the Bruce, king of Scotland in the early 14th century won victories against England, this resulted in independence from England, and he is remembered as a national hero in Scotland.
'this ' cannot refer back to 'victories' in addition victories is plural therefore the reference cannot be correct therefore out

C. Robert the Bruce, King of Scotland in the early 14th century is remembered as a national hero in Scotland, because his victory resulted in the independence of Scotland from England.
Better than the remaining bunch therefore our answer

D. Robert the Bruce king of Scotland in the early 14th century, winning victories that resulted in the independence from England, and he is remembered as a national hero in Scotland.
independent clause doesn't contain main verb therefore out

E. The king of Scotland in the early 14th century, Robert the Bruce, won victories with the results that, with the results that Scotland became independent from England and he is remembered as a national hero in Scotland.
usage of comma after that doesn't help in resolving to the right meaning therefore out

I understand option C has the least errorrs among the 5, but isn't option C incorrect ideally? The option changes victories to victory and thus changes the meaning completely

To answer your query, if Option A displays a clear grammatical error, then an error-free answer choice is considered the superior option even if it alters the meaning; in fact, it is the meaning conveyed by the error-free option that is considered the intended meaning.

due to his victories he is remembered as a national hero --- due to can only modify nouns. How is 'his victories' a verb?
