Can "that" be used as a pronoun for individual ?

Thanks.

Hi Swaroopdev,

"That" can be used as a sentence connector to connect clauses or can be used to "refer to a subject" of a sentence in order to meet the quantity of subject-verb pairs in a clause.

Regards,
Dom.

The nutritionist defined an obese individual as one handicapped by a severe excess of weight with difficulty refraining from eating.

(A) as one handicapped by a severe excess of weight with difficulty refraining from eating

(B) to be one that is handicapped by an excess of weight with difficulty refraining from eating

(C) as one that is handicapped by an excess of weight and that has difficulty refraining from eating

(D) to have difficulty refraining from eating and being handicapped by a severe excess of weight

(E) as having difficulty refraining from eating and handicapped by a severe excess of weight

C for me
defined X as Y is the correct idiom.
to be/to have - incorrect. B and D are out right away.

C maintains parallelism - one that X and that Y. so C is a good choice for the right answer
A has a slightly meaning error. handicapped with difficulty refraining from eating, or one with difficulty refraining from eating? A is out.
E is out, because we need a noun/pronoun after AS, otherwise, the usage of AS is not correct.

C is the best answer.

Why choice A is incorrect? I read mcvictor's post to clear my doubt, but I still could not understand how it is not conveying the intended meaning

C is definitely wrong: the pronoun "that" cannot refer to a person - the correct pronoun should be "who".

A is better than C. OA corrected.

(Note: The modifier "with difficulty refraining from eating" depicts a typical exception to modifier touch rule - the following excerpt is from Manhattan SC guide -

In general, noun modifiers must touch their nouns. However, there are a few exceptions to the Touch Rule.
1. A “mission-critical” modifier falls between. The less important modifier refers to the noun plus the first modifier.

MANHATTAN REVIEW OFFICIAL EXPLANATION:
