Can someone help me to analyze the GMAC official mock test?
As there is no time-management tab for Mock 1 & 2? How can we know about our timing ??
How are we supposed to know about the question's difficulty while analyzing the mock and generating an error log?

Sorry to laugh at your trouble but welcome to the official tests. The only test product that does not have any explanations, analytics, or really anything except the official questions.
The value of the official GMAT protests could be greater. I think everyone agrees about that and there’s definitely ways to improve them. However, the value they present today is in the shape of giving you the most accurate estimate of your future potential score and by serving you official questions. That is something they have a monopoly on and that is something that will always be valuable and so there’s not a lot of motivation for them to improve their product…. Unfortunately.
The biggest issue I see, is not having any explanations. Which is pretty presumptuous for verbal questions…. Anyway, if you want to analyze your performance, my suggestion would be to print screen the questions you missed and put them into a word document or print them out and you can label the mistake as well as any takeaways. You can also put them into a separate spreadsheet if you want but I have not found too much use out of analyzing my mistakes as a database. Instead I focused on eliminating each and all of them and they put them into two categories. One category was knowledge mistake where I elect knowledge. I would research and learn and pursue that. The other mistakes would be careless or basically other reasons and I would also work on those but in a different way.

On timing, I tried two things, either of which was fairly straightforward. If you have a smartphone with a stop watch feature, you can start it at the same time you start the section and hit “lap” (or whatever equivalent you have on your phone) to keep track of how much time you’re spending per question.
The other option is to just write all your times on a sheet of paper, as you’re working through the questions. I found this to be less distracting than looking at my phone but took a little more time.
Once I was done with the test, I would input all of these times into a spreadsheet to analyze by question type. Im happy to provide an example of the rough framework I used!
Nothing groundbreaking, but I really liked being able to track my CAT timing performance.
