Congrat's on the invite! That's a tough one...
I think there will still be plenty of spots at Feb 3, and getting extra facetime with the adcom would be at least neutral and probably slightly positive. On the other hand, the interview is conducted by an adcom member, so this benefit won't be as much as it would be for schools who do blind alumni interviews.
My guess is they offer this choice for people who aren't 100% certain about NYU as a way to improve their yield. If you opt for the regular interview sooner, that could show that you're already sold on NYU and that could be a positive.
Either way, any benefit to your admissions chances that may be conferred by one option or the other will be dwarfed by the importance of the interview itself. If I was in your shoes I would opt for the regular interview sooner because the whole waiting thing is slowly killing me.
