If you are shooting for schools with good Marketing programs in California and Texas then UCLA Anderson, USC Marshall and UT Austin come to mind but you would be aiming for a higher GMAT score. Below that rung you can consider Pepperdine and UC Davis. I am not as familiar with the Texas schools, after UT Austin.

I am interested in applying to a UC. With my profile, is UC Davis reachable? What are the other UC's that I can consider? What do you think of programs at UC Riverside and UC Irvine? Can I target any of them or are they too risky?

I would recommend you targeting them. Plus, you would prefer applying and getting dinged, then not applying (and theoretically having been accepted).

If the applications are not too different, you could just apply to all three schools and then worry about which one you would attend, if you receive acceptances from two or more programs.
