Firstly, there is clear distinction between such as and like, since we are dealing with examples of different species (predator and prey) we can rule out options which contain like. Hence, C,D, and E are out.

In option A The hypothesis about the coevolution of species. such as a predator and prey, adapting to each other’s evolutionary changes is fascinating. the modifier adapting is referring back to the hypothesis. But it should modify species. So, for this reason we can eliminate Option A.

Option B The hypothesis that species, such as a predator and prey, coevolve to adapt to each other’s evolutionary changes is fascinating.
The examples are correctly represented with such as and the meaning is preserved in that coevolve (verb) is referring back to species.

Hence B is the correct answer.
