120+100-z=180

You know supplementary angles add up to 180 degree when they lie on the same side of a straight line.
Refer the diagram, AOB is a straight line.Hence
\(\angle{AOB}+\angle{COB}=180\)
Or, \(x+(y-z)=180\) (Since \(\angle{COB}+z=y\))
Or, \(z=x+y-180=100+120-180\)
Or, \(z=40\)
