Hi,
Since there is practically no school that offers a master's degree in consulting (aside from my other post, which is Ashridge Business School - but it's designed for employed consultants, it's a part-time program), I suggest that, if you don't want an MBA, take up an M.S. in Operations Management. That's the nearest you can get to consulting..
I suggest the University of Rochester (Simon Graduate School of Business). They offer an MS in Business Administration - concentration in Service Management:

Concentration in Manufacturing Management or
Service Management:This M.S. degree with a concentration in Manufacturing Management or Service Management provides management training for individuals who wish to pursue a career in operations. The program can help operations managers and industrial or manufacturing engineers gain further expertise in operations management and stay current with the most recent developments in the field. Upon graduation, students who concentrate in Manufacturing Management are prepared to engage in a career managing the manufacturing function, as well as those supporting it in finance, accounting and marketing.
Students who study Service Management are ready to pursue careers with line responsibilities or consulting, as well as in service-oriented industries such as finance and retailing.--------------------------------------------------------------
