I've been preparing for the GMAT since 2 months and my scores seem to be plateauing at 520-560.

I've completed all the OG13 MGMAT guides. Solved OG 2017 Quantitave review completely using the timer while solving 10 questions per drill.

These are my mock test scores (all timed exactly like test conditions and have skipped the AWA and IR : the order of the test being, Quant Verbal IR AWA)

Veritas Prep 560 (Q43 V24)
Official Gmat 520 (Q39 V22)
Manhattan Prep 600 (Q44 V30)
Officail Gmat ii 520 (Q37 V25)

Anything above 600 and my goal will be acheived.
I have a maximum of one month left for taking the gmat
Any suggestions on improvement of scores and concretize my score for something above 600 so that I can be confident about getting the same on the D-day

You can improve in both Quant and Verbal to get a 600+.
For Quant understand the concepts that Gmat tests thoroughly. You can go through the Ultimate Quant megathread of Gmatclub or the MGMAT guides are also sufficient.
For Verbal, MGMAT guides are very good. But you need to read atleast 2-3 times for understanding the concepts fully. You can follow Gmatninja for understanding the nuances of Gmat verbal. But seeing that you have only a month left, I would suggest to revise the MGMAT concepts and put them to practice. Then appear for Gmatprep tests. These are the closest to the actual test and will enable you to gauge your current level.

Most years, the Average Score on the Official GMAT 'hovers' around 550 - so a 600 is 'above average' (and by extension, most Test Takers won't score that high). Based on your practice CAT Scores, you almost certainly have the skills needed to score at that level, but you have to be a bit more consistent about how you work through GMAT questions (meaning that you need to take the proper notes, avoid doing work "in your head", etc.). However you choose to proceed with your studies, it's worth knowing that you do NOT need to correctly answer ANY questions that you think are too hard or too weird on Test Day - so the best choice to make when facing those questions is to quickly 'guess' and move on. You can then use the time you 'save' on all of the other 'gettable' questions (re: the ones that you need to correctly answer to hit your Goal Score).

1) When is your Official Test Date?
2) Going forward, how many hours do you think you can consistently study each week?
3) When are you planning to apply to Business School?
4) What Schools are you planning to apply to?

To answer your first question, despite the many posts on GMAT Club by folks who scored 700+, scoring 600 on the GMAT still takes considerable effort for most test-takers. Furthermore, since your score has plateaued around 520, you really need to look at HOW you have been preparing and make some changes. To improve your quant and verbal skills, you should follow a linear and structured study plan that allows you to individually learn each topic, starting with the foundations and progressing to more advanced concepts.

I understand you have put in much effort to solve a lot of questions. It will be effective only when you understand the concepts well. Identify the specific concepts where you lack understanding, in both Quant and Verbal.

Analyze the mock tests/practice questions that you have taken so far. Learn how to analyze GMAT mock tests to course correct effectively.

Bridging the major gaps in your understanding will help you reach 600. You can utilize the resources that you have or go through the ones I shared below. You can get access to a lot more of these videos and practice questions once you sign up for the Free Trial.
