I'm hoping to apply for 2021 Fall MBA intake and am in the process of choosing universities.
Profile:
Nationality: Pakistan
Undergrad: 3.2 GPA (Lahore University of Management Sciences)
GMAT: Most Recent 650 (Scheduled for 2nd Attempt in on the 14th of August - scoring 710 consistently hence hoping for a 700+ score)
Work Experience: 3 Years (1st Year in a Burgeoning Startup Attempting to Create Livelihood for Local Farmer Population - 2 Years in Friesland Campina working in Demand Planning and Sales and Operational Planning/Insights
Awards: Topped Country in Additional Mathematics in IGCSE Exams
Co-Curriculars: None - however a documented creative streak (write my own blog and have self published a small novella describing life in University)
Internships: Multiple Local as well as Single International Internship in China
Letters of Recommendation: Planning on getting 2 from Directors at Pakistani OPCO's of Multi National Companies who I've worked with previously.
Target Schools:
Primary Focus - University of Toronto, McGill, Melbourne School of Business, NUS Singapore, HEC Paris
Secondary Focus - US Universities of all 3 Tiers (HBS, MIT, Duke, NYU, Dartmouth)
Other Concerns:
1. I know my profile is a bit weak for top rated US universities which is why they are of Secondary Focus as well however I would want nothing more then to get into any of the universities in my list.
2. I also feel as a Pakistani student I might find it a bit difficult to get employment in US post MBA.
3. I also feel that being from Pakistan puts me in a lesser represented pool of Applicants which might work to my favor.

Your profile looks pretty decent and you are correct in terms of ethnicity factor as schools are always on the lookout for people from different nationalities to improve the diversity of the cohort, so that would be an advantage here.
LUMS is a pretty good school and considering you are in the top 5 in Pakistan, it can work in your favor. Be sure to highlight this.
Now talking about GMAT you definitely need to increase it and aim at least 680+, as it’s an important part of your application with a 25% weightage, your score would be a marring factor.
Work experience is a bit on the weaker side for MBA. But if you frame a strong application highlighting the projects you undertook, the impact you created with it, Entrepreneurial experiences, if properly explained, will be a good differentiating point for your application and compensate for your low work experience.
Coming to extracurricular activities, it won't be considered valuable by schools until you can show that you created some positive impact via it, on yourself, or on your surroundings.
The part of the international internship seems interesting. It showcases a number of skills, such as open-minded nature and willingness to explore new boundaries. Plus, schools appreciate the international experience.
HEC along with the US schools HBS, MIT, Duke, NYU, Dartmouth mentioned are all in the dream category.
Other schools University of Toronto, McGill, Melbourne School of Business, NUS Singapore as listed are more or less in the competitive category.
So, your essays will play an integral role in your application and make it stand out among your peers Aim for the coming first rounds, you stand a fair chance of getting in.
