How to apply the concept of that/those in comparison sentences?

Wild animals have less total fat than livestock. CORRECT
Jack has less money than John. CORRECT

But why are the following incorrect?

Wild animals have less total fat than that of livestock.
Jack has less money than that of John.

This will be interpreted as:

Wild animals have less total fat than total fat of livestock. 
Jack has less money than money of John.

What is wrong with the above sentences?

What about the sentences - 
Wild animals have total fat less than that of livestock.
Jack has money less than John.

How do we decide for the following sentences?

Rice has protein of higher quality than that in wheat.
Rice has protein of higher quality than wheat.
Rice has higher quality protein than wheat.

Please Help. Comparisons have been troubling me from quite some time.

Here we are comparing Wild Animals to Livestock.

We can't use that of.

You can spot the element/item on which the comparison is happening. Here it is  total fat .

We are comparing total fat of 2 groups.

Raj has a tennis coach like his brother.

So here it's pretty confusing. What are compared. Raj's coach vs His brother's coach. or Raj's coach vs His brother.

Here we need to add extra info.

Raj has a tennis coach like his brother does.

This is to resolve ambiguity.
