I woke up early to get a good start on SC from GMAT Ultimate Grammar and maybe i woke up too early i came across a few problems that i couldnt not explain to myself. If someone could help me with these it would be greately appreciated!

Are we not supposed to use "that" only with restrictive cluases, ones that can not be ommited? What is the importance of the 30 specialist.... why couldnt we used which consisted of 30 speicalist travelled (should we used a comma before which and after specialist?)
