There are many benefits to timing your practice, including:
Keep in mind you're two years removed from undergrad, so your GMAT is that much more important than an older GPA. That being said, I don't think Stanford is realistic without a higher GMAT score (unless you have some other powerful experience not listed here). That being said, according to your GPA you're fairly bright, so raising that score should be possible.
