Given what I know now, I would cater your extracurriculars more towards your personal interests. You'll have to opportunity to take leadership positions during your first year as a club AVP. I think some mistakenly overextend themselves to get additional leadership positions during their first semester for professional reasons. Not everyone wants to be the guy begrudgingly composing the club newsletter at 11PM following 6 coffee chats. I'd pick out a club or two that you're passionate about and can have an impact on.
For courses, I think being open to exploring outside of Stern is a huge added benefit. You can take 15 (Technically 18 I believe, with the 63 credit final semester option) credits of coursework at other NYU schools. You have the #6 ranked law school and the best applied math program in the world next door. Depending on your interests, taking a few non-Stern courses would be something I'd recommend. Of course, you have plenty of flavor within the MBA program itself. As a first year that's getting done with the core curriculum now, I can't fully expound on my personal recommendations until next year. But the general theme is that you should be open to exploring during this transformative period in your life.
