What do I do if I still cannot confirm the meeting with my alumnus, 2 weeks after initial contact? He is barely responsive...

Notify the adcom that you are trying and that communication has been difficult (In a respectful manner). Usually, that will prompt them to reach out on their own accord to the interviewer and gently prod them.

i’m in the same boat interviewed with one and the second is non responsive adcom later emailed me saying they can’t take on the interview and came back with a replacement the replacement is also not responding lol

It happens, and typically if one or two replacements don’t respond then the adcom will have someone internal handle it. Just remember to be polite and patient and this will only work out in your favor.
